There are partially hydrogenated oils and then there are fully hydrogenated oils.

One thing I read said that fully hydrogenated oil does not have trans fats and is ok. Another source I read said that fully hydrogenated oils do have trans fats and are just as bad as the partially.

What is the truth?

quote:
...fully hydrogenated oil does not have trans fats...

True, but it would not be a liquid (i.e. OIL) at room temp.

quote:
...fully hydrogenated oil ...is ok.

I wouldn't really go that far...they are less 'bad' for you than trans fatty acids (spurs free radicals, possible carcinogen, etc), but they may still be the culprit of aterial clogging.

quote:
Another source I read said that fully hydrogenated oils do have trans fats...

FALSE. If a fatty acid is fully hydrogenated, there is no possible way to create a trans isomer of that fatty acid carbon chain. Hydrogen would have to be removed and a double bond between two carbon molecules would need to exist in that isomer. If converted, it would become partially hydrogenated once again, due to the chemistry of each molecule.
