View Full Version : Pulled Salsa Chicken

Put 3-4 raw chicken breasts in a crock pot, cover with a large jar of salsa, and leave for 6 hours.

When it's done, mix in a container of fat-free sour cream... although it tastes fine without it.

After being in the crock pot so long, the chicken pulls so all you have to do is stir with a fork. I am HORRIBLE in the kitchen but this was easy and diet-friendly :)

Did you cut dairy yet?

I'm getting so sick and tired of grilled meat :violin:

I have a huge tub of this in my fridge. Tastes kind of like chili. A co-worker of mine gets fancy and puts in black beans and extra veggies, cumin, curry powder... but I'm not that motivated LOL

I haven't been having any dairy. My last prep I would have about 3oz of hoodia cal countdown ff milk (45 cals for 8oz). I would add a drizzle of my ff cream and add a shot of espresso, lol. I would use K's little tea cup to make this. It was my sorta STARBUCKS make believe treat. I had that up until the Friday before my show, it didn't hurt me I think but this time around since I am doing the cardio so early I only do the shot.

I love cumin. Its really good with black beans!

Hell yes, this sounds fabulous :) Is there a particular salsa you use? Also, what would you add to it besides the sour cream? Would rice or beans be good? I like having one-dish meals.

I just grabbed some salsa off the shelf lol. I think it was Tostitos medium.

I'm sure you could get very inventive with this dish. Corn, beans, chopped veggies, etc. I had some in a wrap on Monday.

My only complaint about it is I don't know how much to eat :nerd: (I weigh all my meat). The salsa weighs it down.

Thanks for this! Threw it crock friday night low heat and ate sat morning. The sour cream set it off nicely.

Do the chicken breasts become dry if you reheat it?

I did the crockpot thing with a turkey breast a few weeks ago .. and when it came out, it was delicious. But eating it over the next few days was torture, as it was like eating cardboard.

I put the turkey breast in there for 8 hours though. I think next time I will try it for 4 hours instead.

No, not dry at all. The salsa and sour cream keep it very moist.

Moist. I hate that word :o

Can you slow cook this in a regular pot? Hubby and I want to try it, but we don't have a crock pot. :rose:

When I make something like this, I calculate it all as it goes in the recipe. Since it's all mixed, I then weigh the total. Whatever you take per serving is a percentage of the total. For ease of calculating, I usually figure out what 100g is for macros. Assuming you use the same recipe every time, then you know what each 100g serving is.
