Default (Protein) Chocolate Mousse Cheesecake

"Not a Cheat Meal" Chocolate Mousse Cheesecake

Courtesy of Oxygen Magazine & kitchen-tested by T-Cake

Ingredients:
1 cup non-fat/skim milk
2 envelopes unsweetened, unflavored gelatin
4 scoops favorite flavor whey protein powder
2 cups low-fat cottage cheese
2-3 Tbsp Splenda or Sucanet

Instructions:
1. Heat milk in the microwave until it boils. Use a medium-large bowl.
2. Once boiling, use a whisk to dissolve gelatin packets in the milk.
3. Add protein powder, cottage cheese, and Splenda/Sucanet to the milk mixture. Mix until ingredients combined.
4. Pour mixture into a blender and blend until smooth and creamy.
5. Pour mixture into a glass pie plate or several ramekins.
6. Chill until set, approximately 90 minutes.

Notes:
* I used 4 scoops of IsoPure Low Carb Protein Powder in Dutch Chocolate as my protein powder in this recipe. If you'd like to compare YOUR protein to mine, here are the macros on mine:
2 scoops of Protein is...
220 calories
1 g fat
3 g carbs
50 g protein

* I used a glass pie pan for my cheesecake because the recipe made SO MUCH more than I thought. Since I used a whole pie plate, I am saying my version is 8 servings.

* I used chocolate powder, but vanilla or strawberry would probably taste just as good.

* Make sure when you refridgerate this (especially once it's cut) that you cover it so you don't end up with that crusty-Jell-o-type edge.

Macronutrients for MY version:
8 servings (1/8 of 9" glass pie plate)

113 calories
1 g fat
4 g carbs
22 g protein

The recipe actually said you can pour it into a pie crust or make it crustless (as I wrote above).

But you know, my purpose in making these recipes right now is to find new, creative, tasty ways to get my protein in, so adding the crust (though it's not SUPER DUPER harmful to my calorie intake) kind of defeats the purpose.

It would probably be okay with Cookies n' Cream, sure

Any idea how long it will stay edible, refrigerated?
If I make this, it'll prolly take several days for wifey & I to eat it.

Well so long as you keep it covered, I'd give it a good 4-5 days or so. Treat it as if it were Jell-o pudding or Jell-o gelatin; it'll be tasty so long as it's covered and unable to dry out
