I made this last night at random for dinner last night and one of my meals today. It turned out pretty tasty. This is 2 servings.

16 oz chicken breast, cut up
4 cups baby spinach
Frank's Redhot sauce
EVOL
1/2 cup 2% shredded taco cheese blend
Salt and Pepper

Put enough oil in the the bottom of the pan to coat. After I cut the chicken up I seasoned it with salt and fresh ground pepper. Tossed the chicken to make sure it was all coated well.

I cooked the chicken real slow for about 12 minutes. Letting all the meat turn white on all sides, after that I turned the heat up to high to "fry" the chicken. Once it was turning brown I removed it from the heat and placed in a bowl. Put some Frank's on is and gave it a good toss until all the pieces were coated.

I put that on top of 2 cups of spinach, 1/4 cup 2% cheese, and tossed again. Made the other salad for one of my meals today. Eat up.
