Carrot Cake Pancake
Saw this in a mag... haven't tried it yet but sounds good

Carrot Cake Pancake
4 egg whites
1 tablespoon cottage cheese
˝ cup oatmeal
1 teaspoon flax oil
2 tablespoons shredded carrots
2 teaspoons raisins
1 teaspoon walnuts
1/3 teaspoon cinnamon
Pinch nutmeg
1 teaspoon vanilla
1 packet splenda
Icing;
1 oz fat free cream cheese
˝ package sugar free vanilla pudding mix
1 tablespoon water
1 packet sweetener
Mix all ingredients for pancakes together in a bowl. Coat skillet with nonfat cooking spray and pour in pancake mix. While pancake is cooking whip allicing ingredients together and set aside. After about 10 minutes or when pancake is golden brown flip… remove from pan..cool 5 minutes..coat with icing
Per serving- 398.9 calories, 33 grams protein, 44 gr carbs, 10.1 grams fat
