Here's some quick simple tips I use..
1. Cut the chicken into 1/2" pieces (bitsize). Spray pan w/pam (or use olive oil) and Stir fry chicken.. you can sprinkle w/a little garlic powder, pepper, or ginger to taste.. then add a little cut up carrots, celery, green peppers and/or mushrooms and a few dashes of Kikkomans soy sauce (best tasting).. Stir fry for a few more minutes then add brown rice and a few more dashes of soy sauce. You can also scramble and egg or two and add that if you have time. Easy stir fry, tastes good.
2. Buy some Garlic herb or Parmesan crusted Shake N Bake. Lightly coat those breasts w/it and bake for 20 min's. Warm up some of your favorite bottled marinara sauce and pour that over the chicken and some whole wheat pasta. Start to finish, ready in about 20 min's.
3. Boil a few chicken breast... when done cut them up or shred them, then add the chicken to pot of water, chicken bullion, noodles and cut up veggies of choice. Chicken soup.

Also, throw in some lean red meat (96/4 ground beef, sirloin, eye of round) or fish (talapia, orange roughy, tuna) now and then to break the bordem up.
