Easy White Chili
1 lb. chicken breasts/tenders, cook in EVOO and chopped
1-2 yellow onions, chopped
2 cloves minced garlic
3 cans navy beans
16 oz chicken broth (I make my own by boiling the chicken instead of cooking in EVOO)
1-8 oz can green chilis
1 heaping tbsp cumin
1 tbsp oregano
cayenne pepper to taste
salt to taste
Throw everything in crockpot or large soup pot, cook on low to moderate heat for at least 30 minutes. Longer & slower is better.
Serve topped with chopped green onions and grated cheese (your choice; I use pepperjack).
